One of family’s all-time favourite dinner time meals is slow cooked corned beef silverside with a side of vegetables and white sauce.
It’s one of my favourites to make as well because all it involves is putting the beef and aromatic ingredients in the slow cooker and leaving it to cook on its own all day. Who could complain about that?
If you don’t have a slow cooker you could also cook this in a large pot on the stove. It will simmer away on the stove for about 1.5 – 2 hours depending on the size of your corned beef.
A corned beef usually goes for about $9.00 – $12.00* per kg and even a 1kg piece will feed our family of 4 (2 adults, 2 kids).
Another thing I love about this recipe is that the leftover beef can be quite versatile in its uses.
It can be reheated and eaten with more vegetables and rice or cooled, sliced and put in sandwiches or chopped up and put in a stir fry. Sometimes I dice up the leftover meat and put it in a batch of savoury muffins.
The best part is that I can be certain that my husband and kids will eat it.
I can’t attribute this to any other reason except for the fact that it tastes great. Protein is always a hit and miss with my kids, most of the time they leave it aside and just eat the side dishes.
